Summertime cooking easy with this pizza

When it’s hot outside, l look for shortcuts in the kitchen that keep me from making the house even hotter. I’m sure you do the same.

A few week ago, I made barbecue chicken pizzas for Reggie and me, using chicken leftover from a rotisserie chicken I had purchased at the grocery store.

The recipe was quick and easy to put together, and the only cooking involved was the few minutes the pizza cooked in the oven.

We love pizza at my house, but this was the first time I had made barbecue chicken pizza. I sampled a similar pizza about a year ago at an event catered by a local restaurant. I loved it, and I’ve wanted to try my own version since.

The concept is easy enough. The pizza sauce is barbecue sauce. The toppings are chicken and mozzarella cheese. I also added green bell peppers and a few onions to my pizzas. Some people add cooked bacon as well.

You can make your own pizza crust or buy a pre-made crust. I chose our current favorite: pre-made flat bread pizza crusts.

I made a quick, thick barbecue sauce, but a bottle of any thick sauce will work as well.

Assemble is easy. Spread a little barbecue sauce on the pizza crust and add your toppings. Then mix the chicken and green peppers with a little of the sauce and spread on the crust. Top with cheese and bake. So quick and easy!

My husband was very leery of this recipe. Might as well admit it. He couldn’t imagine it. And when he saw the pizza, he was expecting a traditional pizza sauce because that’s what it looks like. If you see him, ask him about the barbecue chicken pizza. He will tell you he loved it and went back for seconds!

My family has become reacquainted with rotisserie chicken in the last few months, and I have a few other recipes I’m going to be trying as well with our leftovers. Keep checking back for more ideas!

Barbecue Chicken Pizza*

Leftover chicken (rotisserie, poached, grilled, etc.)

Thick barbecue sauce

Green peppers, sliced

Onions, diced

Mozzarella cheese

Pizza crust, homemade or pre-made (I used 3 flatbread crusts)

Spread a thin layer of barbecue sauce on the pizza crust. Place chicken, peppers and onions in a small bowl and mix with a little barbecue sauce. (Don’t overdo the sauce.) Place mixture on crust and top with shredded mozzarella cheese.

Bake according to crust directions.
