Don’t you love it when someone brings you something yummy to eat? I sure do!
A few weeks ago, my friend Faye Allen Taylor showed up at my office with a multi-colored, six-layer cake for me to try. The pretty cake was topped with cream cheese frosting.
Faye is always cooking and trying new things to share with her family and friends. I got half of this cake; her neighbor got the other half.
To make this pretty cake, Faye used three kinds of boxed cake mix: orange, French vanilla and strawberry. The three colors are so pretty together, especially with the white frosting between the layers.
The combination of cake flavors is delicious, and the frosting is the perfect finishing touch.
Faye put her own spin on the cake layer recipe, adding a “heavy spoon” of Miracle Whip to the ingredients. She also used brown eggs. The cake batter for each cake mix is poured into four cake pans, making very thin layers that cook in 8 to 10 minutes.
To add extra flavor to her cream cheese frosting, she mixed in a tablespoon of cold coffee.
Since Faye brought me the cake last month, she has made it six more times. For some of the later cakes, she has used lemon cake mix. This cake is certainly adaptable with different mix flavors. And in the end, you have two cakes.

Faye’s Rainbow Cake
For each cake:
1 box sifted Duncan Hines cake mix (orange, strawberry and French vanilla)
1 cup water
1/3 cup vegetable oil, plus more for pans
3 brown eggs
1 tablespoon Miracle Whip
Preheat oven to 325 degrees. To prepare her pans, Faye recommends adding 1 tablespoon oil in the middle of each pan. Use your hands to cover surface of pan. Add waxed paper to pan, then turn over paper in pan to reveal side coated with the oil. Make sure to smooth down the paper. Repeat with all 4 pans.
Put sifted cake mix, oil and water in bowl. Slowly mix with a mixer and add eggs one at a time. Then mix in Miracle Whip. Do not over mix.
Pour into 4 prepared pans.
Bake at 325 degrees for 8 to 10 minutes.
Repeat with 2 other cake mixes until you have 12 layers.
Use 6 layers in each cake, alternating colors (orange, French vanilla and strawberry) and adding frosting between each layer. Frost entire cake.
Makes 2 cakes.

Cream Cheese Frosting
2 8 oz. packages of cream cheese, softened
3 pounds sifted powdered sugar
4 sticks softened butter
1 tablespoon pure vanilla extract
1 tablespoon cold coffee
Mix cream cheese, sugar and butter until smooth. Mix in vanilla and coffee.
This makes a big bowl of icing. Some might be left over.
